Executive Chef Erin Rau

A native of Wichita, KS but with deep family roots here in South Louisiana, Executive Chef Erin Rau graduated from the Chef John Folse Culinary Institute at Nichols State University in 2006.  

But her passion for the art began many years before that in her grandfather’s kitchen where she made her first roux.  During her family’s yearly pilgrimage through Louisiana, visiting other family members, Chef Rau, soaked up the culture and traditions in the kitchens of her South Louisiana family— a foundation for her culinary creations.
